Mike and I spent last week with his family, Thanksgiving a week early. It was so good to see them, and we got to meet our new little niece, who was born in June (and got to see her roll over for the first time!).
We stayed at Mike's parents' beach house in Rocky Point, Mexico (just south of Arizona, on the Sea of Cortez). The sunset one night was particularly beautiful, though I guess the get them pretty often there.
We ate a lot of fantastic Mexican food while there, but the highlight of our time there was our big Thanksgiving feast: turkey, homemade cranberry sauce, stuffing, mashed potatoes, roasted squash, and throughout the day we snacked on homemade ceviche (amazing!). It was a great Thanksgiving -- good food but even better to be with family.
Today, the other Thanksgiving, we went to a potluck with some other embassy folks. You may remember for our "fakesgiving" earlier this year I made sweet potato casserole (an Epps family favorite) with local sweet potatoes. It was so difficult because they were so tough and starchy, I swore to myself I'd never make them again. Well, luckily Mike didn't know that and signed me up to bring them again (they did turn out pretty well last time). This time, I boiled them for 3 hours. It knocked the starch right out of them, and the skins pretty much fell right off! Win!
As you can see from the picture, the marshmallows are a little "well done.". Just how I like them :)
We're spending the evening at home together, our first Thanksgiving, baking and eating pumpkin pie, and feeling do grateful for all our blessings and for each other.

Three Thanksgivings! Now that's fun! Glad your sweet potatoes turned out so well and you got to spend time with Mike's family.
